  • 2 Cups washed and chopped spinach leaves
  • 1 finely chopped onion
  • 2 finely chopped tomatoes
  • 2 slit green chilies
  • 1-inch piece grated ginger
  • 4 minced garlic cloves
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon garam masala
  • To your preference salt
  • As needed water
  • For that final touch Fresh coriander leaves

Step 1
Begin by rinsing the tur dal. Soak it in water for about half an hour, then let it drain.
Step 2
Heat a touch of ghee or oil in a pressure cooker or a deep pot. Sprinkle in those cumin seeds, and let sizzle. Toss in the finely chopped onion and let it turn golden brown. The grated ginger and minced garlic are next in line. Sauté them for a minute.
Step 3
Put in the finely chopped tomatoes, green chilies, turmeric powder, red chili powder, and a pinch of salt to the pot. Stir the mix well, and let the tomatoes soften into a mushy delight.
Step 4
Introduce the soaked tur dal to the pot, adding enough water. Seal the pressure cooker/pot. Allow the dal to tenderly simmer until it cooks well. This translates to 4-5 whistles in the pressure cooker or about 20-25 minutes of gentle heat in the pot.
Step 5
As soon as the dal reaches its desired texture, add the chopped spinach leaves to the mix. A sprinkle of garam masala adds that final touch of flavour. Mix it in with care.
Step 6
Top off this enticing creation with fresh coriander leaves.
